** August 2025: Trio Restaurant has now opened in place of what was previously Pacific Brimm Cafe **
Information is a bit tricky to find on this brand new Parksville eatery, but we believe Trio is the latest venture from the owners of Craig Street Pizza, who also own Cafe Floresta.
Chloe, however, is sad to say goodbye to local coffee shops, which all seem to be reinventing themselves as restaurants.
Perhaps there is more demand for evening meals than morning pastries - let us know your thoughts in the comments.

In January 2025: Pacific Brimm Cafe underwent renovations and began focusing on restaurant meals rather than coffee and snacks.
We were still able to order take-out coffee, but it began to feel awkward doing that in what was now a restaurant, rather than a coffee shop.
Pacific Brimm used to be one of Chloe's favourite Parksville cafes. In the heart of downtown Parksville, the tables out front were perfect for dog-lovers.
They almost always had carrot cake on offer, as well as a selection of cookies and bars and sometimes even apple pie. Pacific Brimm also served breakfast and lunch and was usually open 7 days a week.
Even on rainy days we love being able to sit outside at the covered tables with Chloe enjoying a coffee and a bakery treat.
